The Chef Behind the Vision

Chef Yuu Shimano trained at the Tsuji Culinary Institute in Osaka and Lyon before embarking on a transformative eight-year journey through the kitchens of France. Most notably, he honed his craft under the guidance of legendary three-Michelin-starred Chef Guy Savoy in Paris, mastering the soul of French cuisine while fusing it with the meticulous precision of his Japanese heritage. He later brought that unique culinary perspective to New York City, where he led the kitchen at MIFUNE New York.

At Restaurant Yuu, Chef Shimano brings together these global influences to craft an evolving 13-course seasonal tasting menu that celebrates the harmony between nature, technique, and artistry. The winter 2025 menu features elevated ingredients such as Koginut Squash, Uni, Veal, Foie Gras, Lobster, Grouper, and his signature Duck en Croute.

Curated by General Manager-Sommelier Akio Matsumoto, formerly of Tokyo’s three-Michelin-starred L’Effervescence, the Wine and Sake Program is as elevated as the cuisine. For a more casual but still curated experience, guests can visit the adjacent eight-seat wine bar, where a shorter tasting menu showcases the most popular dishes from the main counter.
