Marco runs a third-generation spice farm nestled in the hills of Sicily. What makes his ingredients so special? “Time, tradition, and the sun,” he says with a smile.
He still dries his herbs the old way — under open skies and turned by hand. His blends are all organic, packed and sealed with care, and shipped directly to select chefs around the world.
We first connected with Marco on a sourcing trip and knew right away his products belonged on our menu. His dried basil and fennel pollen are behind some of our most-loved recipes.
