The culinary program is helmed by Executive Chef Juan Carlos “JC” Ortega, whose resume includes NYC hotspots like Blue Fin and Catch Steak. His menu reflects a balance of refinement and accessibility, emphasizing clean, seasonal ingredients with bold global influences. Signature starters from the Raw Bar and Crudo include East Coast oysters with tomato granita, and an upscale Haute Caviar service. Notable appetizers range from Shrimp Pil Pil to Spicy Tuna Rice Cakes and Steak Tartare with truffle and cured yolk.
